****Here's the substitution****
This is a case of leaving the V7 chord and going back to the I (Eb7, back to Ab in this example). Rather than
that, you can stay on the V7 chord turn it into a Minor, then I7, then into the rest of the verse. This is a very
handy little trick I've learned ;-).
